Mom’s Cole Slaw
- 1 cup of mayonnaise or salad dressing, depending on your taste
- 1/2 cup sugar
- 1/4 cup vinegar – I usually use cider vinegar, but you can try different ones. I personally like using Raspberry Wine Vinegar
- 3/4 to 1 large head of cabbage
- 1 carrot
Blend the mayo, sugar and vinegar. Grate or thinly slice and chop the cabbage. Using a vegetable peeler, cut the carrot into very thin, short strips. Mix with cabbage. Fold in the dressing. Place in the fridge overnight and serve.
